Spring Menu 2016

This video shows the introduction about a new spring menu based on a “Caremma“, a folkloristic’s event of Salentine tradion.

The Caremma is a straw puppet dressed of black with spoon and representing thread an old that is burnt to end March at the end of the Lent (Caremma) to symbolize the end in the winter and the beginning of the spring and the brightest period of the year.

In the same way we burn our old menu and we embrace the spring and with her  all the news that enter in our kitchen.
