Nino Rossi, born in 1981, after studying communication, dreams of a future behind the stove and thus begins to train himself as an autodidact on books. After several stages and traineeships in prestigious kitchens such as those of Norbert Niederkofer and Giancarlo Perbellini, he returns to Calabria and takes over the management of Villa Rossi. In 2013, he continued his training at the Arthaus Hotel in Davos where he took care of managing the kitchen but 2016 was the turning point, when he started the Qafz, in Santa Cristina D’Aspromonte (RC). Chef Rossi loves to break the mold by proposing recipes and traditions of a new Calabria but his messing up ingredients and raw materials certainly do not exclude rigor and desire for perfection. Its gastronomy is research and experimentation and the Qafz, an eighteenth-century farmhouse transformed into local cuisine, is a guided journey towards new experiences. Nino Rossi stands out for his technical mastery and absolute creativity, winks at the East and, despite his location in the heart of Aspromonte, references to the sea are not missing from his menu. Thanks to her extraordinary skills, the prestigious awards are not long in coming and today she can boast a Michelin star and a Le Guide de L’Espresso hat.
